
Kale and Apple Salad
Ingredients
- 2 Tbsp. lemon juice
 - 2 Tbsp. olive oil
 - 1 bunch kale, ribs removed, leaves thinly sliced
 - ¼ cup dates, cut into thin slivers
 - 1 apple, peeled and cut into thin wedges
 - 3 Tbsp. slivered almonds
 - 1 oz. Pecorino Romano cheese, grated
 - freshly ground pepper
 - kosher salt
 
Serves 4
In a large bowl, whisk together lemon juice, olive oil, and ¼ teaspoon salt. Add the kale, toss to coat, and let stand for 10 minutes.
Add dates, apple wedges, almonds and cheese, season with salt and pepper, and toss well.
